I filled the pot with hot water. He showed me how to carry it out, and I poured their tea exactly as he showed me. He looked pleased but said nothing, not even looking at me. I felt fancy doing it; it was no trouble. I refilled their tea once while they were there. He also asked me to keep his wife's water glass full always. When I first came by, refilled her water glass, and asked if they needed more tea, the man gave me $20 and brushed me off. He did that two more times that afternoon. They paid with no tip (I thought), but $60 and a good lesson sufficed for me.
My manager found me an hour later. He gave me an envelope and said they told him they would only come in when I work from now on. The envelope held $100, a business card, and a handwritten thank-you note. They put this request up for many fine dining spots. I was the only one who got it right and handled it "graciously." This felt odd. After the first lesson, they treated me like I was invisible, backed up by the fact they didn't tip me in person. Every return trip was the same.
If you didn't know the deal, they looked like jerks. But they tipped well, and I treated them like VIPs every time.

I brought out her steak, and she started eating. She ate about a third of it when I asked, "How is everything?" She replied, "Great. Bring me another steak." I asked, "Is there anything wrong with that one?" She said, "No, it's great. I want a second one."
I went back to the chef and told him. He could not believe it. But we served her another steak. She ate all 48 ounces of steak and left me a $40 tip.
